Publication of new DIN 10544 for hygiene requirements for commercial dishwashing

The German standard DIN 10544* “Food hygiene - Commercial dishwashers - Additional hygiene requirements and tests” was published with the issue date 2024-07.

This document is applicable to commercial dishwashers that fall within the scope of DIN EN 17735 “Commercial dishwashers - Hygiene requirements and testing”. DIN 10544 supplements the content of the European EN 17735 with the following points:

- Type testing for cleaning drinking vessels (e.g. glasses, cups ...)
- Non-routine testing of dishwashers (to support operators)
- Testing of the cleaning of cutlery on special washware carriers
- Cleaning of reusable packaging for handover to and use by end users


With the publication of this German standard in addition to DIN EN 17735 "Commercial dishwashers - hygiene requirements and testing", all essential contents of the standards DIN 10510, 10511, 10512 and DIN Spec 10534 are now covered. These have therefore since been withdrawn.

Reusable crates and reusable containers for unpackaged food in the commercial sector, such as bread baskets in bakeries or meat crates, fall under the scope of DIN 10522 "Food hygiene - Commercial clleaning of reusable boxes and reusable containers for unpackaged foodstuffs".

In addition to DIN EN 17735, DIN 10544 also defines all tests to be carried out by the operator in addition to the type test and is therefore aimed not only at manufacturers but also at operators of commercial dishwashers.

Conclusion:

The application of DIN 10544 and DIN EN 17735 guarantees operators a high-quality hygiene result. Compared to alternative washing methods, commercial dishwashers can ensure a high level of process reliability with the simplest operation in everyday life. The optimized balance between cleaning temperature and cleaning chemicals used contributes to optimal energy efficiency and resource conservation.

This protects the environment and the wallet of the operator and its customers.
